Pecan Pie Dip

Cheesecake layer

8 oz cream cheese, softened
1 tub Cool Whip
1 cup powdered sugar

Pecan Pie Topping

1 cup chopped pecans
1 cup brown sugar
1/2 cup light corn syrup
1/2 stick butter
1 egg
½ tsp vanilla

add a pinch of salt

Instructions:

Cheesecake Layer:
beat the softened cream cheese until smooth. Add the whipped cream and powdered sugar, mixing until fluffy and fully incorporated

Spread the cheesecake mixture evenly into a serving dish

For Pecan Pie Topping
Add to a pot the chopped pecans, brown sugar, corn syrup, butter, egg, vanilla extract, and salt.
Cook over medium heat, stir continuously bringing to a low boil to cook the growing out of the topping. Turn down to a simmer and stir till thickens. Take off heat to stop cooking as it will continue to thicken. Let it cool down before spreading over cheesecake mixture.

Once the pecan topping has cooled slightly, pour it over the cheesecake layer.

Serve with crackers, pretzels, or fruit slices for dipping!
