1/2 cup peanut butter

8 slices sandwich bread

1/2 cup jelly (any flavor)

5 large eggs

1/3 cup milk

2 teaspoons pure vanilla extract

4 tablespoons butter

1/2 cup maple syrup 

Directions: 

Spread the peanut butter on 4 bread slices and the jelly on the other 4 slices, and combine to make 4 sandwiches. 

In a wide, medium bowl, whisk together the eggs, milk and vanilla. 

In a large nonstick skillet, heat 2 tablespoons butter over medium heat. When the butter is almost melted, dunk two of the sandwiches into the french toast batter and let the excess drip off. 

Place in the pan and cook until golden brown, 3 to 4 minutes for each side. Repeat with the remaining 2 tablespoons butter and 2 sandwiches. 

Let cool slightly and cut into sticks. Serve with small dish of warm maple syrup for dipping. 

 

VARIATIONS: Instead of jelly, use the following with peanut butter and follow recipe the same: 

1. Bananas (Just place slices of banana on top of the peanut butter — if you’ve never tried this combination you are in for a treat!) 

2. Bacon (The combination of peanut butter and bacon is heaven!) 

3. Marshmallow Fluff (For all you Fluffernutter fans out there). 

 

NOTES: If preferred, you can use honey instead of maple syrup for dipping.
