Get you some Russet Potatoes.. clean well with brush and water. Preheat oven 400

.. Poke holes in potatoes with fork..roll your potatoes in Olive Oil and Salt

Place cookie sheet in oven on bottom rack.. place potatoes on TOP rack..

Cooking time will vary from 45 minutes to an  hour usually, and up depending on the size and quantity of potatoes you cook..

The skin should be puffed up, golden-brown and crispy, and the potato should squish easily and be very soft on the inside.

alternate method make foil-wrapped potatoesbasically the same directions as for oven-roasted potatoes, just wrap the potatoes in foil before cooking.

use this method for a softer skin, plus the potatoes stay warm in their foil and fresh longer if not eating right away
