OLD TIMERS BROWN PAPER BAG SKILLET FRIED CHICKEN & GRAVY MADE WITH BACON GREASE

2 broiler fryers, cut into serving size pieces (skin on – bone in)

Self Rising Flour

Salt

Black Pepper

Paprika

Garlic powder

1 or 2 bay leafs

2-3 large peeled garlic cloves whole

Bacon Grease

Combine flour salt paprika pepper and garlic powder in clean brown paper bag ( can just use bowl) Shake chicken in a few pieces at a time in flour mixture till coated well.

In large cast Iron Skillet Heat Bacon drippings, (I use about 3-4 spoonfuls) add garlic pieces and bay leaf

dont have on high, but not on low either.. get a steady good heat and shake off excess flour on chicken pieces then add to skillet.

Do not crowd! Brown your chicken and cook slowly turning when one side is good and crispy. add a little more seasoning if desire, Paprika, a little salt and pepper.

If you are doing just enough chicken to fit in your skillet you could cover pan tightly and cook about 20 minutes or till tender or as pictured here, just brown your pieces put them on slotted drip pan and continue growing the rest of your chicken pieces.. have your oven heated to 400 degrees. Once all chicken is browned and cooked well, place into oven (uncovered) and continue to cook chicken while you make your gravy out of the drippings.. Set oven timer to 13 minutes .

Milk Gravy from Drippings

Pour all of drippings into metal strainer that is in metal bowl (be sure to leave the little brown crusty bits in your skillet) Remove the garlic pieces and bay leaves.

Return about 3 Tbsp of the drippings you strained to your skillet and blend in about 3 Tbsp of flour. mix well with wooden spoon .

Stirring continuously till mixture bubbles. Stir in 1 cup of water to start with.. stirring well then 1 cup milk (Evaporated milk is best or can use regular milk)

Cook and stir.. gravy will thicken.. can add a little more milk or water to thin out a little if needed. you will pepper it very well and salt it as needed. you will need to taste this gravy to see if its to your liking.

makes just enough gravy to go over some mashed potatoes for your family meal.

when chicken comes out let it rest and enjoy with green beans, mashed potatoes with gravy over it and some homemade macaroni and cheese. Yeasty rolls or homemade biscuits will complete your meal.
