An old antique recipe that has a surprising main ingredient… SOUR KRAUT!!!! You may say YUCK but before you holler, try it first.. it is very moist and delicious. If you prefer texture you can leave your kraut alone but if you prefer not to have the texture you simply mince it up.. now days is easier cause we have blenders and food processors to do the job for us.. so enjoy and find out which way you like it best..

OLD TIME SWEET AND SOUR KRAUT CAKE

1/2 cup butter or margarine

1 1/2 cups sugar

3 eggs

1 tsp vanilla

2 cups all purpose flour

1 tbsp baking powder

1 tsp baking soda

1/4 tsp salt

1/2 cup cocoa powder

1 8-oz can (1 cup) saurkraut, drained, rinsed, should be finely chopped or leave alone if you want texture

(mine is home canned so it is already finely shredded)

1 cup water

Drain and rinse your kraut.. finely chop or cheat using food processor .. I am leaving it alone today for texture..

In large mixing bowl, cream butter and sugar till light.

Beat in eggs one at a time, and add vanilla

Sift together flour, baking powder, baking soda, salt and cocoa. Add to creamed mixture alternately with water, beating after each addition.

 

Stir in kraut.

I added 1/4 cup milk chocolate chips

Turn into greased and floured 9x13x2 baking pan

and bake at 350 for about 35 minutes (according to your oven.. could be less or more.. watch)

dust with confectionary sugar, serve with ice cream and hot fudge sauce
