OATMEAL CAKE WITH ICING

1c quick cooking oats

1 1/4 cup boiling water

Pour water over oats. (Let it stand while you gather and mix your ingredients to cream together.)

Cream

1 stick of butter

1 c white sugar

1 c brown sugar

1 tsp vanilla

2 eggs beaten

add to oat mixture above.

1 1/2 cup self rising flour

1 tsp cinnamon

1 tsp vanilla

Bake in greased pan 25 minutes in 350 degree oven.

Icing

6 tsp butter melted

1/2 c brown sugar

1/3 c milk

1/2 tsp vanilla

1 c coconut

1/2 c nuts (optional)

Melt butter in saucepan with brown sugar, have eggs milk and vanilla mixed together in measuring cup, pour in over sugar and quickly take off heat and mix with wooden spoon to incorporate off burner to temper eggs .,, once mixed well, can place back on low heat and add in cup of coconut and nuts if desire.. turn off heat and pour over cake and bake for 5 more minutes.
