Apple Cake 

4 cups chopped apples

2 cups sugar

1/2 cup vegetable oil

2 tsp. vanilla

2 cups all purpose flour

2 tsp. baking soda

2 tsp. cinnamon

1 tsp. salt

1 cup walnuts(optional) 

Preheat oven to 350.

Combine apples and sugar, set aside. Blend eggs, oil and vanilla in one bowl. Mix flour, soda, cinnamon and salt in another bowl. Mix apples with the egg mixture, then gradually add the dry ingredients. Mix in nuts if desired. Bake for 35 to 50 minutes. 

Note: I have found that if you chop your apples and mix with the sugar and let set overnite or several hours this makes for a moister cake. Just cover your bowl and let sit. The sugar mixes with the juice from the apples and makes a kind of syrup.
