MINI PEACH UPSIDE DOWN CAKES
you start out with a basic yellow cake batter, have it mixed up and ready to go
spray your muffin tins with bakers joy
You can use pineapple and cherries but I am using a quart of my canned peaches today
shake a mixture of cinnamon and sugar in the wells
next take about three peach slices per well
About a tbsp brown sugar to each well
pinch of allspice into each well
sprinkle white sugar into each well
a tad of butter into each well
now you will pour batter over top
give another little shake of the ole cinnamon and sugar
pop into the oven at 350 degrees for about 20 minutes.. you will just have to watch them..
take out of oven and let cool a sec .. loosen the edges with knife
this is DEFINITELY a dish you want to serve with ice cream
