SERENA’S MINI CHEWY  MUFFIN CHIP COOKIES- WITH CHOCOLATE FUDGE & BUTTERCREAM ICING


Ingredients

3/4 cup brown sugar
1/2 cup sugar
1/2 cup butter
1/2 cup shortening
1 1/2 tsp vanilla
1 egg
1 3/4 cup flour
1 tsp baking soda
6 ounces chips (any kind will do,  Chocolate Peanut Butter, White Chocolate I used a mixture today)

Directions

Heat oven to 375 degrees F
beat brown sugar, sugar, butter, and shortening until light and fluffy.


Add vanilla and egg


Beat well.
Add flour, baking soda, and salt.
Mix well.


Stir in  chips

Spray a mini muffin cup pan with Bakers Joy

Take a Fruit Baller and use the large end to scoop out cookie dough

put in oven and bake about 10 minutes you can tell … watch them.. do not over bake.. they will harden some as they cool

take out carefully with tip of icing spatula

let cool and frost with your Chocolate then top off with your buttercream icing

BUTTERCREAM FOR SMALL PROJECTS

1 stick buttter

3 cups confectionary sugar

1/2 tsp salt

2 tsp vanilla

3 tbsp milk

Cream butter then add sugar salt and vanilla.. add in milk and if needs to be thicker add more sugar..

put in bowl with lid in fridge while you make your chocolate icing.

CHOCOLATE FUDGE ICING

1 Stick Butter
1/2 c. Cocoa
1/3 c. milk
1 lb. Powdered sugar (I don’t measure use to right consistency add little at a time while beating)
1 Tbsp. Vanilla

on stove melt butter add cocoa and boil one minute, Stir constant.

Take off heat

Add remaining ingredients and BEAT until smooth

fill bags  and decorate
