Micro Peanut Brittle. 

1 cup white sugar
1/2 cup light corn syrup
Stir together in a microwaveable bowl or a 8 cup glass measuring cup
Micro on high 4 minutes,

Add 1 cup peanuts or cashews
back into the micro 5 – 6 minutes

Watch it carefully, don’t let it get too brown you just want it golden brown

Add 1 teaspoon butter and 1 teaspoon vanilla – Mix well.
Add 1 tsp baking soda , stir well and pour carefully onto a buttered cookie sheet, spreading as thin as you can with a wooden spoon or spatula.

Cool and break into smaller pieces. Stores quite well (or not, depending on how much you like it!

Very tasty (even if the sugar gets too brown it has a very good taste).
