Mexican Wedding Cookies

1 C. butter

4 TBSP. powdered sugar

2 C. flour

2 tsp.vanilla

2 C. finely chopped pecans 

Cream butter & sugar til light & fluffy.

Add vanilla, mix well, add flour mix well, add pecans mix well (dough will be very stiff). 

Roll dough into 1″ balls. Place on ungreased baking sheet & flatten slightly. 

Bake at 300 degrees for 25 – 30 minutes. 

Let cool slightly, then roll in powdered sugar while warm. Let completely cool & then roll in powdered sugar again. 

makes approximately 40 cookies.
