MEXICAN LASAGNA

MEXICAN LASAGNA
ingredients
1/2 cup green onions coarsely chopped
1 1/4 lb lean ground beef
3/4 cup mild salsa
1 burrito kit (8 tortilla’s, seasoning, rice and beans)
12 oz shredded Mexican- blend cheese (3 cups)
Aluminum foil
Preheat oven 400 degrees
1. Preheat large saute` pan on medium 2-3 minutes. Place ground beef in pan; brown 3-4 minutes, stirring to crumble meat. Stir in salsa and two tablespoons seasonings from kit cook 1-2 more minutes until no pink remains. (N0te: I add a can of light red kidney beans, diced tomatoes or Rotel , and I slice up some green olives, you can put jalapeno peppers or whatever you like in this make it your own, Debby )
2.Place 3 tortillas in 13×9 baking dish. (debby kinda greases it a little first with some of her hamburger mixture so wont stick) Layer one half of the beef mixture and 1 cup cheese in bottom of dish. Sprinkle with 2 tbsp green onions. Repeat

3. Top with 2 tortillas, Sprinkle with remaining 1/4 cup green onions and 1 cup cheese.
when it is all said and done you should have three layers of tortilla’s in the pan
Cover with foil and bake 20-25 minutes or till bubbly. (Deb didn’t cover hers but it still turned out great)
4. Prepare rice and beans from kit. Combine in saucepan with 1 1/2 cups water and cover. Bring to a boil Reduce heat and simmer 10-12 minutes or till water is absorbed.
serve with rice black beans and sour cream.. lettuce or guacamole can be added if you wish
