Serena Adkins Ellison, you asked about a Broccoli & Cheese Casserole. This one is my favorite:
Broccoli & Cheese Casserole – Bake @ 350 @ 45 minutes
3 Tablespoons Butter
1 onion, diced
20 oz. chopped frozen Broccoli
1 can condensed Cream of Mushroom Soup
1 Cup shredded (sharp) Cheddar Cheese
1 Cup Mayo
2 eggs, beaten well
1/2 tsp. garlic salt
1/4 tsp. black pepper
1/2 tsp. season salt
1 1/2 tsp. lemon juice
Topping: 12 Ritz crackers, crushed/mixed with 2 Tablespoons butter scattered on top.
I usually mix all the liquids together, then add other ingredients & mix well. I do spray the casserole dish, or grease with butter before placing the Casserole in and baking. Makes it much easier to clean up. Enjoy!
