LUSCIOUS LEMON BUNDT Makes 16 servings.

1/2 cup lemon juice
1 box yellow cake mix
1 tbs lemon zest
1 pint blackberries
3 oz pkg instant lemon pudding mix
1/4 cup sugar or Splenda

Heat oven to 350°. In sauce pot, cook lemon juice and sugar until sugar is dissolved, set aside. In bowl, combine cake mix and pudding mix. Prepare cake mix according to package directions, adding lemon zest. Stir in 1/3 blackberries. Pour batter into greased and floured Bundt pan.
-Bake 40 min. Or until done. Let cake cool in pan 5 min. Invert onto wire cooling rack. Brush lemon sugar mixture over cake to coat. Let cool completely. Transfer cake to serving platter. Fill center with remaining blackberries. Dust cake with powdered sugar, if desired, then SERVE…
