LITE -N- EASY CHOCOLATE COCONUT MOUSSE CAKE
SERENA’S GUILT FREE LITE-N-EASY CHOCOLATE COCONUT MOUSSE CAKE
For cake:
1 box Chocolate Devils food cake mix
1 1/4 cup water
3 egg whites beaten
1/2 cup coconut
1/3 cup semi sweet chocolate chips
coconut extract
1 (8oz) lite cool whip
1 can of reduced fat sweetened condensed milk
For pudding: – 5 cups milk 2 boxes of sugar free fat free instant chocolate pudding Jello Mix
Topping:
Lite Cool Whip
or
(here is a recipe for a SUBSTITUTE for Sweetened condensed milk to make it less calories)
1/2 cup cold water
1 1/3 cup powdered milk
3/4 cup splenda
1 tsp vanilla
stir milk powder into cold water till dissolved then microwave 1 minute or till steaming then stir in splenda and vanilla, cover and chill in fridge
DIRECTIONS
Preheat oven 350
Take choc devils food cake mix put into bowl
add water and mix well..
add 1 tsp coconut extract 1/2 cup shredded coconut, and 1/3 cup semi sweet chocolate chips mix batter.. will be thick like brownie mix.. use spatula to scrape sides.
add 3 egg whites lightly beaten LAST
Prepare your Springform Pan
pour batter into the pan
Bake cake at 350 for however long your cake say’s on box.. mine baked for about 30 minutes..
poke holes in top of cake
take reduced fat sweetened condensed milk OR substitute and add 1 tsp coconut extract to the sweetened milk
Pour over cake and into holes..
KEEP in spring form put warm cake into the fridge the colder the better mine set for 2-3 hours…
Make your Chocolate Fat Free Sugar Free Instant pudding using 2 boxes and 5 cups of milk (AKA Chocolate Mousse we are calling it LOL)
put in fridge to get thicker and colder as it sets up
take out and cut
place mousse on top with a dollop of lite cool whip on top of that
.. GUILT FREE NO ICE CREAM AND SOOOOO GOOD!!!!!!
