JAMBALAYA
2 lbs smoked pork sausage cut into small pieces
8 pork chops cut into 1î pieces
Chicken pieces (meaty pieces such as thighs and drumsticks)
3 lg onions chopped
1 bunch celery chopped
2 Tbsp parsley
3 beef boullion cubes
3 chicken boullion cubes
1 tsp kitchen bouquet
4 c long grain rice
3 Tbsp lemon juice
Salt n pepper to taste
Cayenne pepper
Brown all the meat separately and remove from pot. Preferably and iron one. Brown seasonings in same pot as the meat. Dissolve boullion cubes in water and add kitchen bouquet to the mixture, add other seasonings to taste. Measure rice and place in a large roasting pan pour 8 cups liquid over this use the boullion water and plain water to make 8 cups layer the meat and the sautÈed seasonings over the rice. Add lemon juice and stir. Cook in 350 oven till all liquid is absorbed by rice. Lift the cover of the pan ONLY to check absorption. This is a large recipe but it freezes extremely well. Just freeze in casserole dishes then reheat in a 350 oven till hot. It is better to have casserole partially thawed before heating.
