HUMMINGBIRD CAKE WITH CREAM CHEESE FROSTING

3 c all purpose flour

2 c sugar

1 tsp salt

1 tsp soda

1 tsp cinnamon’

3 eggs beaten

1 1/2 c oil

1 1/2 tsp vanilla

1 8oz can crushed pineapple undrained

2 c chopped pecans or walnuts divided

2 c chopped bananas

combine dry ingredients in large mixing bowl add eggs and oil stir until dry ingredients are moistened. Do not beat. Stir in vanilla, pineapple, 1 c chopped pecans and bananas

spoon batter into 3 well greased and floured 9 inch cake pans. Bake at 350 for 25-30 min or till cake is done.

Cool in pans 10 minutes. Remove from pans and cool completely.

Spread frosting between cooled layers and on top and sides of cake. Sprinkle with 1 c chopped pecans.

Cream cheese Frosting

1 8 oz cream cheese softened

1/2 c butter softened

1 16oz. pkg powdered sugar

1 tsp vanilla

combine cream cheese and butter cream till smooth. add powdered sugar beating until light and fluffy, Add in vanilla. makes enough for 3 layer cake.
