HOT PLATE DINNER ROLLS

1/2 c lukewarm water

2 pkg yeast

1/2 c milk

1/2 c sugar

2 tsp salt

1/2 c shortening melted

2 eggs

5-51/2 cups plain flour

Dissolve yeast in water. combine milk, sugar, salt, and shortening. Add eggs and stir in. Add 2 cups flour and beat. Stir in dissolved yeast. Add more flour to make a soft dough.

turn out onto lightly floured board and knead until smooth and satiny. Place in greased bowl and also grease top lightly. Cover and let rise in warm place until doubled in size. about 1 1/2. hours. When light, punch down and let rest 10 minutes. Shape into rolls or coffee cakes. Let rise until doubled. Bake in moderate oven. 350 degrees for 25 minutes or rolls. or 30 minutes for coffee cakes, or for individual rolls 20 minutes.
