To make tomato puree:

(peel tomatos by placing them (without green stems) in boiling water for 1 min- take out and place in cold water bath, squeeze a bit of liquid out of them and place in collander with bowl underneath to drain- let drain for 20 min or so.Place in food processor or blender and puree into sauce (can use food mill too but thats too much work for me!) 

18c tomato puree

1/3c. brown sugar

2T. italian seasoning

1t. oregano

1t. basil

1-2T. garlic powder

4t. onion powder

4t. salt

3-4t. fresh cracked pepper

1c. lemon juice 

place in prepared jars. Hot water bath for 35min. 

this is approx. measurements. I started with things and just kept adding to taste. so adjust yours as you like. Also I did use 3 different kids of tomatos, beacuse that’s what we grew. Beefsteak, baby grape & baby yellow pear. I think for sure i’d try to make this with 2 kinds if you had them. but I think they will be fine with what ever you have.
