GRANDMA EFFIE’S HOMEMADE CARAMEL PIE..

made the mostly, by one of her daughters Erma

2 reg pie crusts baked and cooled

1 c. cream (evaporated Milk)

1 1b. Brown Sugar ( 3 cups )

1/2 c white sugar

1 c. self rising flour

6 egg yolks (save whites set to side)

1 1/2 Tablespoons Vanilla

water ( just enough to mix)

Bring cream and Brown Sugar to boil in medium saucepan till sugar is dissolved. In bowl add flour, white sugar and enough water to mix.. Beat your egg yolks and add vanilla… Pour yolks into flour mixture.. then flour mixture into boiling brown sugar.. stirring till thickens with wire wisk.. towards end it will become harder to stir… good workout.. CAREFUL NOT TO BURN.. BROWN SUGAR BURNS EASILY… Pour into two baked regular pie crusts.. or one deep dish pie crust.. start on meringue.

Meringue

take reserved egg whites and beat at high speed until doubled in volume keep beating till stiff peaks form.. then slowly add white sugar… add a tsp vanilla and spread meringue on pies… put in oven under BROIL watch as it will go fast… turn pies for even broiling..

 

 

 

COOL PIES in fridge till firm.. I think next day is best to eat..
