Don’t know what to do with those apples falling off the tree out in your backyard?? Too tart you say?? NONSENSE!!!!

HOW TO MAKE APPLESAUCE WITH TART TRANSPARENT APPLES

Take 1 5 gallon bucket of apples

Wind falls, and green apples may be used. Wash. Remove spots and blemishes.

Core and peel ( I like to core first so you can get the little bits of peal easily around where the stem was)

Put apples into a tall heavy bottomed pot. Add the smallest amount of water I’m talkin not even 1/3 of a cup. (just enough so the bottom wont scorch)

Add a small tab of BUTTER

let apples boil down, these kinds of apples are already soft so they will boil down rapidly. (careful not to let the boiling applesauce jump out and burn you) STIR STIR STIR with a long wooden spoon

OK now decide quickly if you want a batch of creamy applesauce or chunky

and use old fashioned potato masher to get to consistency you want to achieve. I like it sort of in the middle.

Then add in cinnamon (I don’t measure do it to your taste)

Then add white sugar (again to your taste and to the tartness of apples, add a little at a time stir and taste)

Have clean sterile Quart jars ready with funnel. Ladle in the applesauce carefully and wipe rim clean add lid

Put in water bath canner for 20 minutes boiling. Or 5 lbs pressure for 8  minutes Keep in cool dark place (like basement)
