HERSHEY’S COCOA FUDGE

3/4 c Hershey’s Cocoa

3 c sugar

1/8 tsp salt

1 1/2 c milk

1/4 c butter

1 tsp vanilla

Combine cocoa, sugar, and salt in large 3 quart saucepan

add milk gradually

mix thoroughly bring to a bubbly boil on high heat

stirring continuously

Reduce heat to medium

continue to boil the mixture without stirring until it reaches temp of 232F or till a small amount forms into a ball when dropped into cold water. Be sure that the bulb of your thermometer is not resting on the bottom of the saucepan for a true reading

Remove saucepan from heat

Add butter and vanilla to mixture – do not stir

Allow this fudge to cool to room temp until it reaches 110 degrees F

Beat by hand or with electric mixer till the fudge thickens and loses some of its gloss.

Quickly pour into waiting lightly buttered 8x8x2 inch pan

cool. cut into small squares. yields about 3 dozen small squares.
