(Teams great with Parmesan Chicken)

Any mixture of these veggies… we use them all, and you can use broccoli and cauliflower if you like

Cherry or Grape Tomatoes

Squash ( Yellow or Zucchini)

Mushrooms

Onions

Small Potatoes red or Yukon Gold)

Preheat oven to 450.

Microwave whole squash for two minutes ( don’t forget to poke a little hole in it)

Microwave potatoes for 3 minutes.

Slice and microwave onion for 2 minutes

Slice squash and potatoes about 1/8 to 1/4 inches thick.

Lay all veggies on a cookie sheet with whole little tomatoes in the middle.

Drizzle with Extra Virgin Olive Oil.

BE SURE YOU ONLY EVER USE EVOO. FIRST PRESSING, COLD PRESSED. ONLY ONE THAT IS HEART HEALTHY.

Sprinkle seasoning of your choice, we use a ROSEMARY GARLIC seasoning we purchased at Sam’s

Bake at 450 until the tomato skins pop, about 15 minutes.
