Green Tomato Bread (adapted from All Recipes)

Nice and moist – I’ll be making more, freezing for holiday gifts!

GREEN TOMATO BREAD

2 finely diced green tomatoes

2 cups white sugar

1 1/2 cup chopped nuts

1 CUp canola oil

2 eggs

1 Tbsp vanilla extract

1 tsp salt

3 Cups  flour

1 1/2 Tbsp ground Cinnamon

1 tsp baking soda

1/4 tsp baking powder

Preheat oven 350

grease and flour two 9×5 inch loaf pans. MIx tomatoes sugar walnuts canola oil eggs vanilla extract and salt together in a large bowl until well blended. Mix flour cinnamon baking soda and baking powder together in separate bowl. Stir into the egg mixture until just blended. Spoon batter into prepared pans. Bake in the preheated oven until a toothpick comes out clean.. about 1 hour. Let cool in the pans for 10 minutes before putting on racks to cool off completely.
