GRANDMA’S FILLED CARROT CAKE

2 cups sugar

3 cups all purpose flour

1 tsp baking soda

3 eggs beaten

1 cup crushed pineapple drained  ( I add the whole can) 

1/4 tsp salt

2 tsp cinnamon

2 cups raw grated carrots thin

1 apple peeled and chopped small

1 cup raisins

1 cup coconut

1 c chopped pecans Optional 

1 1/2 cups salad oil

1 tsp vanilla

make sure carrots are grated thin

Combine sugar flour baking soda salt and cinnamon and set aside.

Combine Oil, vanilla, eggs, pineapple drained, apples, carrots, coconut, raisins ,( and if using pecans or walnuts save some for the icing as well if using )and mix well

add in dry ingredients do not over mix.

 


Pour into 3 greased and lined 8 inch round pans OR you can put into 9×13 baking dish..

bake 350 degrees for about 30 min according to if you do layers or pan how long it will cook.. thin layers dont take as long.

if doing layers you will put icing between layers when cooled and on top.. if not just put icing over top of 9×13

Cream Cheese Icing 

1 stick butter

cream cheese both room temp .. beat together till fluffy

add in powdered sugar about 3-4 cups and some vanilla

can stir in pecans if using. or place on top of cake to decorate.. fix to your families liking.
