Gingie’s Cornbread
2 cups cornmeal
1 cup self-rising flour
1/4 cup Parmesan cheese
2 eggs
2 cups milk
1/4 cup canola oil

Preheat oven to 400. Mix all ingredients with wisk until well mixed. Spray cast iron skillet with Pam. Pour mix into pan and shake to even it out. Bake @ 400 for 30 minutes. Hope you enjoy it!

This recipe is dedicated to the memory of my second mom when I was in high school, Cheryl Lilly. She gave me the idea of putting parmesan cheese in homemade bread, and so I tried it in my cornbread. I miss you, Cheryl, and I will see you again in Heaven! 🙂
