FRUIT COCKTAIL APPLESAUCE CAKE

2 cups all purpose flour

1 1/2 cups sugar

1/2 cup Wesson oil

1/2 tsp apple pie spice (or just use a tsp cinnamon, 1/4 tsp all spice, pinch of nutmeg)

1 16 oz drained can of fruit cocktail

1 cup sweetened applesauce

1 tsp baking soda

Mix ingredients in large bowl with wooden spoon and add applesauce, eggs, and oil. Mix well with spoon, dont use mixer.

Add fruit and bake at 350 for 40 minutes in a long 9x13pan that is 2 1/2 to 3 1/2 inches deep

Caramel Topping

1 1/2 cups packed brown sugar

1/2 cup evaporated milk

1 stick of butter

pinch of salt

cook over medium heat stirring for ten minutes

Cool then beat well and pour over top of your cake

Serve warm. cut into squares.
