whether homemade like mine  or the easy version like Michelle posted down below this recipe.. either way.. WV Fried Pies are a fun and delicious part of WV culture.  Here I have step by step photos of me making the homemade  fried pies.. enjoy and leave feedback =) .. – Serena

WV  Fried Pies


mix together thoroughly using a  pastry cutter to blend the dough together in a medium metal bowl.

1 qt  all purpose flour  (4 cups)

4 tsp baking powder

2 tsp salt

2 eggs

1/2 pt sweet milk (1 cup)

1/4 cup shortening

Shape into long thick log and

Refrigerate overnight wrapped in plastic wrap tightly

Next Day:

take out log and cut off some a bit at a time as you roll out… put rest in fridge wrapped tightly so it stays cold …

 

Roll out thin over lightly dusted board of SELF rising flour

and cut in rounds as desired. (I use the mouth of my canning funnel as a guide for my pies and I cut with a small fluted pastry wheel , you can use a small pizza cutter or knife to cut yours if you don’t have one

take one of  your rounds and roll out again making very thin but still firm enough to hold your filling

Put a tablespoon of desired filling  (any type filling apple, pineapple cherry ect..)today I am using canned cinn chunky apples

Fold over till edges meet,

moisten edges slightly 

and seal by crimping with fork and cutting off excess with your pastry wheel, should look like this

you should have CLEAN un used oil and a heavy bottom pot with a basket ready to go… (I use an old, large pressure cooker pot for all my deep frying.. you can use a chicken fryer electric skillet also for this recipe)

I fill my pot just enough .. notice in the photo

Deep fry in hot oil 375 degrees….get your oil hot.. and once it gets hot (you know it’s ready when you take a sprinkle of water and flick it  from your fingers in the pot and you hear a CRACKLING POPING SOUND.. it’s ready to go)  also..  start turning down the temp cause oil can get too hot and burn.. making NOTHING taste yummy

 

Lower basket into hot oil one pie at a time.. if shallow turn once until golden brown,  (I used a fork to turn mine over) do not get it  overdone.. you can tell

drain on paper towels or as I did on a slotted  pan..

Sprinkle warm pies with powdered sugar, regular sugar, sugar and cinnamon mixture,  or glaze them….. I did both.

here are some photos of the glazed ones.. you just put your pies on a wire rack over top of a cookie sheet to catch drippings

now make a glaze out of powdered sugar and a tiny bit of water (or milk) mix up and brush on your pies thick and let harden and dry and then brush on the other side ..

if you are using confectionary sugar on yours and sugar and cinnamon.. shake on your fried pies AS SOON as you take out of hot oil..

now put on plate and enjoy

Serve hot or cold

these pies you see here made 20 pies and I only used  a little over HALF of my pie dough this recipe should make 30-35 pies all together

PS you can fry in Electric Skillet in 1 inch oil.. have done that also.. but most time deep fry is faster.

EASY VERSION BY: Michelle Bolt Riffe -wrote in TRIED AND TRUE RECIPES ON FACEBOOK…….. I cheat and use can biscuit dough the pilsbury canned grands and roll them out into a round and use any filling like serena said and seal the edges with water and pat them together to make sure they are sealed and fry them just like serena does, I use the butter tasting grands also makes a more flakier crust
