nonstick cooking spray

1 cup canned cooked pumpkin

1 cup bran cereal shreds, crushed

3/4 cup skim milk

1/3 cup light or dark corn syrup

2 egg whites, slightly beaten

1-1/4 cups all purpose flour

1/3 cup sugar

2 tsp. baking powder

1/2 tsp. salt necessary

1/2 cup raisins 

Directions: 

Preheat oven to 400 degrees. Spray 12 2-1/2 inch muffin cups with cooking spray. 

Combine pumpkin and next 4 ingredients in a bowl. Combine remaining ingredients in another bowl. Add pumpkin mixture and stir until well blended. Spoon into prepared muffin cups. Bake 20 minutes or until toothpick inserted in center comes out clean. Cool in pan 5 minutes. Remove and cool on wire rack. 

Makes 12 servings.

    WEIGHT WATCHERS CROCK POT SOUR CREAM SALSA CHICKEN 

    Ingredients: 

    4 skinless boneless chicken breast halves

    1 package reduced-sodium taco seasoning mix

    1 Cup salsa

    2 Tablespoons cornstarch

    1/4 Cup light sour cream 

    Directions: 

    Spray the crockpot with cooking spray. Add the chicken breasts. Sprinkle with Taco Seasoning. Top with salsa. Cook on low for 6-8 hours. When ready to serve, remove the chicken from the pot. Place about 2 T cornstach in a small amount of water. Stir well. Stir the cornstarch mixture into salsa sauce. Stir in 1/4 Cup of sour cream. 

    Serves 4. Each serving is 4 points.
