2TSP. SALT-FREE MEXICAN OR SOUTHWEST SEASONING

OLIVE OIL SPRAY

4TBS. MEDIUM, MILD OR HOT ENCHILADA SAUCE

2 OUNCES (1CUP) FINELY SHREDDED 75% CHEDDAR CHEESE

2TBS. FINELY CHOPPED FRESH CILANTRO (I DIDNT USE THE CILANTRO WE DONT LIKE IT)PREHEAT OVEN TO 350

season each chicken breast evenly on all sides with seasoning.

Place a large oven proof nonstick skillet over high heat. When hot lightly mist with olive oil spray and ad the chicken. Cook, turning once, for 1-2 minutes per side or just until the chicken is golden brown on the outsides.

Remove the pan from the heat adn top each chicken breast with 1TBS of the sacue, followed by one fourth of the cheese and the cilantro. Transfer the skillet to the oven and bake for 4-6 minutes or until the chicke is no longer pink inside and cheese is melted..
