So I KNOW how to make Chicken and dumplings the old fashioned way in the big stock pot over the stove but I am needing to get ready for work and get out the door and still have dinner on the table for my kids when they come in from school instead of jelly sandwiches… HERE is a perfect compromise from my REGULAR recipe and my rushed dilemma .

EASY PEASY CROCK POT CHICKEN AND DUMPLINGS

First off I was lucky this time.. I had a leftover ROTISSERIE Chicken I had from the previous day in the fridge..

PICK the chicken clean off the bone and put into a bowl. Set to the side.

NEXT get our your crock pot and gather your ingredients… you need at least 2 cans chicken broth can use three if you have it to make more broth. I only had two today so I used two.  and get a can of EVAPORATED MILK.

pour in crock pot and add  ONE stick of butter or margarine and a dash of pepper  turn crock pot on high

Now for your  Cornstarch mixture

first take about 2-3 tbsp of cornstarch and put in a cup (obviously I don’t measure)

add a small amount of water and stir with a fork till thin

now pour mixture along with your chicken into crock pot (this is your thickening agent)

NOW you will take about 1 3/4 cups of self rising flour and put in a bowl

add a small amount of water to it.. just enough to mix

stir into a ball and add about 2 tbsp of Veg oil (don’t really measure guessing)

NOW you will drop by the spoonfull one at a time into your hot crockpot mixture.


NOW put on lid and do not take off..

you go take your shower and get ready for work then come back and you should see your dumplings puffed and raised in pot. You now can take off the lid and spoon some of the gravy gently over the dumplings

NOW I turn the heat down to KEEP WARM setting and put my lid on sideways (allowing steam to come out) and I go.. then when I get home we have our dinner ready all I had to do was open some canned green beans and deep fry some perogies  (you could have mashed potatoes already made instead if you wanted)
