Easy recipe that turned out well. I adapted this from my Giada de Laurentiis cookbook. She is awesome. 🙂 

Chicken Parmesan 

4 boneless, skinless chicken breasts ( or enough to serve the number of people you are feeding)

1 1/4 cups parmesan cheese

3/4 Italian seasoned bread crumbs

Buttermilk

Salt

Pepper 

Heat oven to 500 degrees. Soak chicken breasts in buttemilk for about 15 minutes. Mix breadcrumbs and parmesan cheese in a pie pan. Add salt and pepper to taste. Cover baking sheet with aluminum foil and drizzle with olive oil. Dredge chicken breasts in breadcrumb mixture and place on baking sheet. Bake for 15 – 20 minutes.

I served this with spaghetti as a side.
