Dot’s Old Fashioned Irish Stew 

Ingredients

2 pounds lean, beef stew-meat

2 tablespoons olive oil

1 medium sized onion, chopped in large chunks

1 1/2 cups coarsely chopped leeks

5 carrots, peeled and cut into medium chunks

1 can of chicken broth

1 can of beef broth

1 cup of water, or as needed

5 large potatoes, peeled and cut into medium chunks

1 teaspoon sea salt

Black pepper to taste

1 parsnip, peeled and cut into large chunks (optional) 

 

Directions:

Add oil to a large stockpot or Dutch oven and when it’s hot add beef pieces and cook, stirring gently, until evenly browned. Season with salt and pepper. 

Add the onion, carrots, and parsnips and cook on medium heat alongside the meat for a few minutes. Stir in the water and both cans of broth. Cover and bring to a boil before turning the heat down to low. Simmer for 2 hours or longer, depending on the cut of meat you used and if it is tender after the two hours of cooking time. 

Stir in potatoes, and simmer for 30 minutes longer, then add the leeks. Continue to simmer uncovered, until potatoes are tender. 

Serve with cornbread, crackers or hot rolls.
