my sister in law Debby with her scalloped corn at Thanksgiving ..

This portion fits an 8×8 pan Double for a 9×11

1 can whole corn drained

1 can cream corn

1 8 oz sour cream

1 stick butter

1 bx jiffy corn bread mix

1-2 cups cheddar cheese

Put Butter in pan with oven at 350

Once butter is completely melted coat sides of pan with brush

In mixing bowl mix all ingredients with half the cheese

Pour in pan then sprinkle rest of cheese on top

Bake 30-60 min depending on desired consistency

 

Some like it like a corn pudding others in the middle and Some like it baked through like corn bread… find your consistency you like.
