*** Antique Canning  Recipe*****

 

use only dry yellow cucumbers.

Peel Cut, Seed, and cut in strips to desired lengths to make 7 lbs cukes.

Mix 25 Tbsp Lilly lime (from drug store) over cukes and let set 24 hours. Stir a few times to mix well with wooden spoon. Rinse cukes in cold water. Cover with cold water and let stand 3 hours.

Drain and cover with syrup made of the following

1 Tbsp salt

1 tsp whole cloves

1 tsp celery seed

1-1/2 tsp cinnamon

1 tsp mace

1 tsp nutmeg

several roots white ginger

6 lbs. white sugar

2 qts white vinegar

 

Put spices in cloth bag. let pickle. Let pickle stand overnight in syrup. Boil all together for 35 minutes next morning can  and seal while hot. Recipe by Mrs. Sara B. Janney
