ok so this is my Grandpa Tony Farruggia’s Chicken Soup Recipe only I am doing it different this time.. doing it in a crock pot instead of a stock pot..

Crock Pot Chicken Soup From Scratch
One whole chicken
1 large onion chopped
2 carrots cut up (optional I never put them in)
5 stalks of celery cut up also some of the leaves of the celery
1 1/2 c – 2 cups small noodles can be alphabet noodles or ORZO (small italian noodle that is shaped like rice)
1 qt or large can of tomatoes
Lots of Pepper **
Salt to taste

 

REMEMBER  the reason you Use a whole chicken.. the bones and skin is where you get your flavor for your broth…..
I added  the whole chicken to my crock pot (and yes it was frozen, now if I was doing this soup like normal in the stock pot it would have to be COMPLETELY thawed out)  Add water to cover chicken.. let it cook until you smell and see a chicken broth instead of just clear water… then add chopped celery onion, lots of salt & Pepper.

I turned it to low last night and went to bed.. next morning at 7 am I put it on keep warm until later in the day when I was ready to start the soup… at about 11 am I was ready so I took off lid and took out bone and  skin .

I then added 2 cups of small noodles , and 1 quart of home canned tomatoes , salt and peppered again. and put on lid, turned up soup to high so noodles would get done…

come back and check your noodles and turn your soup to keep warm.. don’t leave it on high or your noodles will turn to MUSH!!! serve and enjoy! Best I think done in stock pot but this is great especially when  your sick, you can put it on the night before and the next day not have to do much for your dinner….

Eat it Hot Great for when your congested or sick will open you up immediately
