you know those packets of premade pasta side dishes well this

is my fresh homemade version 

Egg noodles (about 2- 2 1/2 cups dry pasta I use the egg noodles fro Sam’s club)

1-2 TBLSP’s butter

1 cup milk

1 heaping TBLSP flour

1-2 tsp.’s minced garlic

1/2 cups-2 cups frozen chopped spinach

1/2 cup shredded italian cheese like blend of provolone or parmesan with mozzerrella or just parmesan to add creamy texture and taste, can also use a little cream cheese)

salt and pepper to taste

This is soooo easy. Boil Pasta according to package directions in one pot and while it’s cooking begin cooking sauce in medium to large pot.

Melt butter and add garlic, then whisk in flour and milk till smooth, this makes a white rue sauce, once it begins to thicken I add spinach, lower heat, cover with lid, stir occasionally. Drain noodles once they are al dente then add to sauce mixture stir until all spinach is cooked, add cheese and salt and pepper to taste, should be creamy, serve hot. I think you could use garlic powder in the rue if you don’t have fresh and this could be a quick lunch for 2-3 people if you add some cooked chopped meat or additional cheese.
