1 medium head of cauliflower broken in to buds

4 Tablespoon butter

1/4 Cup chopped onion

2 Cups milk or cream

1/4 Cup all purpose flour

3 Cups chicken broth

1 teaspoon Worcestershire sauce

1 Cup sharp process American cheese, shredded (4 ounces)

Chives, for garnish 

Directions: 

Cook cauliflower covered in small amount of boiling salted water for 10 to 15 minutes or until tender. Drain and coarsely chop. 

In large saucepan cook onion in butter till tender but not brown blend in flour. Add chicken broth milk and Worcestershire sauce cook and stir till mixture thickens slightly add cauliflower and bring to a boil stir in cheese then take off heat and serve with snipped chives
