You should use red cobs, but you can use the white if you add a few drops of food coloring.

Assemble 12 dried corncobs if possible RED, three pints of water, 1 pkg powdered pectin, 3 cups sugar, and 1 tbsp lemon juice. 

What you need is dried corn on the cob, such s many farmers store in the cribs, then shell it and use JUST the cobs. Rinse well to get rid of any chaff. Break them in half. boil them rather gently about 30 minutes to hour. then strain the juice through a wet cloth. A dry one absorbs too much sap. Measure to get 3 cups. If you must, add water to get that amount. The dry cobs soak up liquid.

Now add the powdered pectin, bring to a full rolling boil. Add the sugar and heat to dissolve. Bring to a boil again, boil for at least a full minute or until it starts to jell when you lift out the spoon. Might take another minute or so, Skim, pour in sterile glass jars and seal. put in cool dry dark place
