Homemade Country Green beans *****

 

First thing to remember if you are not using beans from your garden and are purchasing them, make sure you snap one in the store and that they are not rubbery they should make a crisp break. Half runners are the most popular, you can substitute snap beans or Pole Beans. I actually love the Roma II beans myself.. no stringing and same great taste as the half runners.

Buy more than what you think you will need for your pot, as they will cook down.

You will also need to buy pork fat or salted pork for the seasoning of the beans if you want you can even use pepperoni or cut up ham or bacon it is all in your taste. I use the salted pork and if I run out I grab some ham or pepperoni from the fridge for emergency’s .  Each is good but all have a unique flavor all their own.

 

Ok now we need to snap OR  string the beans making sure to get out the string on each side of bean or your beans if you chose half runners… cause it will be hard or next to impossible to eat with strings all throughout them

If your using snap beans, or pole beans just snap off ends and break in middle.. my favorite is the Roma II and  of course the half runners.. the Roma II you don’t have to string..

Then wash the beans well. And cover with cold water. Cut off a couple small chunks of fat back, salted pork or whatever meat you are using to season your beans (pepperoni is good too) and salt and pepper WELL.  But on the stove to boiling point.  Once reaches boiling turn down a bit and add a egg size of butter ( if your doing a really large batch of beans use a whole stick of butter) can add onions if desire(I don’t) . Let semi-boil slowly with lid for 3- 4 hours or till beans are tender, (can add more water when low, if needed) stirring once in a while. Halfway through cooking process add new potatoes if desired.  Salt and pepper once more lightly if needed
