COCOALIGHT CAKE 

2 c sifted cake flour

2 cups sugar

3/4 c Crisco

1 tbsp salt

2/3 c  cocoa

3/4 c milk

Beat vigorously by hand or mixer 2 minutes

Stir in

1 1/2 tsp baking soda

1 tsp baking powder

Add: 1/2 c milk

3 eggs (unbeaten)

1 tsp vanilla

Mix well by hand or mixer .

Pour into two deep 9 inch round layer pans (1 1/2 in deep)

that have been either rubbed with crisco or lined with heavy duty lined wax paper

350 about 30 min Cool cake on rack 15 min before removing .

Ice with Divinity Icing on sides and middle .

 

DIVINITY ICING 

1 1/2 cups Maple or Log Cabin Syrup)

3 egg whites

3/4 c chopped pecans

 

Boil syrup to 265 or when a thread of syrup cracks in cold water. Beat egg whites until stiff. Pour hot syrup slowly over egg whites, beating constantly until icing is of the consistency to spread. Stir in pecans.
