Cinnamon Raisin Cake ( or can be cut in small bars) 

1 cup boiling water

1 cup raisins

2 cups flour

1/2 teaspoon salt

1 teaspoon baking soda

1 cup sugar

1/2 cup applesauce

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1 egg 

Combine the boiling water & raisins in a large bowl. Allow to cool to room temperature. Sift together flour,salt, & baking soda. Set aside.

To the cooled mixture, add the sugar, applesauce, spices & egg. Beat well. Mix in the dry ingredients. Pour into a greased 9X13″ pan & bake @375 for 20 to 25 minutes or until a toothpick comes out clean. 

Icing:

2 cups 10x sugar

2 tablespoons flour

1 teaspoon vanilla

pinch of salt

2 tablespoons milk

1 egg white

6 tablespoons shortening
