CHRISTMAS FRUIT CAKES
(Makes 2 5# cakes) can half recipe to make one
1# candied cherries -chopped
1# candied pineapple- chopped
1/2# raisins
1 c dates- chopped
1 cup coconut
3 c coconut
3 c. walnuts chopped
1 120z jar apricot preserves
Mix all fruit above and let stand over night in covered container.
Cream together:
1/2 c orange juice
1 8oz cream cheese
7 eggs
3 sticks margarine
1 1/2 c white sugar
1 tsp vanilla
1 tsp lemon extract
1 tsp baking powxer
2 c plain flour
1/2 tsp salt
Mix dry ingredients alternately with orange juice
pour over fruits
Mix well
Bake in tube pan.
375 degrees for 2 1/2 -3 hrs.
When Cool
1/2 c white sugar
1/2 c orange juice
1 small bottle of brandy flavor
let come to a boil pour on cake.
