CHICKEN CONFETTI

4-6 pound broiler- fryer chicken cut up ‘

1 tsp salt

1/8 tsp pepper

1/4 c salad oil

1/2 c chopped onion

2 cloves minced garlic

2 16 oz cans tomatoes

1 can tomato sauce (Hunts)

1 can tomato paste (hunts)

2 tbsp parsley

2 tsp salt

1 tsp basil ‘

1/4 tsp pepper

cooked and drained spaghetti

Grated parmesan cheese

Wash your chicken pat dry and season with salt and pepper. brown in large skillet with oil and remove chicken. Pour off all but 3 tbsp of fat and add onion and garlic and cooked stir till onion is tender but careful not to burn garlic stir in chicken and remaining ingredients except the spaghetti and cheese

cover it tightly and let it cook 1 to 1/2 hours or until tender.

Stir occasionally.

adding water or broth if necessary. skim off any excess fat. at end add in spaghetti and parmesan cheese. enjoy
