Chewy Oatmeal Cookies
6 dozen cookies
1 1/2 cup butter flavored veg shortening.
2 2/3 cup light brown sugar packed
4 eggs, beaten
2 tsp vanilla
2 cups all purpose flour
1 1/2 tsp baking soda
1 tsp salt
3 1/2 cups oatmeal
24 oz semi sweet choc chips
Preheat oven to 350
combine flour baking soda and salt in bowl and set aside.
using mixer beat brown sugar and veg shortening in bowl until creamy. Add extract and beaten eggs. mix. Add dry ingredients and mix just until blended. Stir in oatmeal and choc chips
drop cookie dough by rounded tsp onto ungreased cookie sheets bake till start to brown but middle still looks underdone. 10 -12 minutes.
Cool slightly on cookie sheet transfer to cookie rack to cool rest of way and set up.
