I Love Zucchini bread but I wanted to try something alittle different … found this one & it is Good ! Had a couple little girls tell me it tastes like ice cream,lol ….
“Cherry Vanilla Zucchini Bread”
2 eggs
1 cup oil
1-1/2 c. sugar
2 teas.vanilla
1/2 teas. almond extract
2 cups Zucchini,unpeeled & grated
10 oz jar Maraschino Cherries,drained, rinsed & chopped
1/2 c. nuts (opt)
3 cups flour
1 teas.baking powder
1/4 teas. soda
1 teas. salt
3-1/2 oz box, Instant Vanilla Pudding mix
Preheat oven 350 degrees. Grease & flour 2 loaf pans.
In a large bowl, combine eggs, oil, sugar, vanilla,almond extract, zucchini, cherries& nuts. Mix well.
In another bowl, combine flour, Bk powder, soda, salt, & dry pudding mix.
Add dry ingredients to zucchini mixture, stir just til combined.
Pour into pans. Bake for 1 hr or til done
