1 1/2 c. flour

6 Tbsp. Shortening

4 Tbsp. Ice- Water

1/2 tsp. Salt

1 cup Grated Cheese 

Sift flour, measure, and sift with salt. Cut in shortening with 2 spatulas, or work in quickly with the fingers till mixture is granular in appearance. Work in water lightly with a fork till little balls of dough just stick together. Turn onto lightly floured board. roll in sheet 1/8 inch thick. Sprinkle 1/2 the pastry with cheese. Fold over and roll. Repeat 3 times. Prick well. Cut in strips 1/2 inch wide and 5 inches long. Place on baking sheet. Bake in hot oven (450) until crisp and brown. about 24 servings.
