Here is a pudding dessert that is always a big hit at gatherings. Amounts are not exact, you may find you need more or less of certain ingredients. The layers may not always come out exact and you may not have as many layers, it depends on the size of bowl you use and the amount you want to use of each ingredient. Just remember to start with the cake part and end with the Cool Whip part. When you have the last layer of Cool Whip on top, then decorate the top the way you want to, it does not have to be exact…have fun!

CAROLINA TRIFLE2 loaves pound cake

3-4 packages instant vanilla pudding

1 can pineapple slices (make sure pineapple is sweetened in heavy syrup)

1 small bag coconut

1 cup sliced almonds

1 large and 1 small container Cool Whip (thawed)

1 small jar Maraschino cherries with stems

1 cup sherry *(optional to sprinkle over pound cake chunks before topping with pudding).Prepare vanilla pudding according to the instructions on the package. You may want to do this ahead of time so that the pudding has time to set up and chill in refrigerator.

Begin by breaking pound cake into bite size chunks. Set aside.Drain pineapple on paper towels and remove after draining onto cutting board and slice each ring into about 8 slices *(or just buy the chunk size pineapple). Drain Maraschino cherries on paper towels and remove to cutting board (after draining) and cut each cherry in half, reserving enough cherries with stems for decoration on top. (approx 5 or 6 cherries with stems).Layer 1:1.Pound Cake

7.Place Maraschino cherries with stems around final layer for decoration.Chill well* Amounts are not exact, it depends on if you use a Trifle bowl or a Punch bowl. You have find you have to use a little more or a little less if each ingredient, depending on size you want. Recipe is not exact, you can add additional fruit if you like, or omit something you do not like. Have fun with this recipe! It’s always a big hit at gatherings and is plenty to go around!
