  • How To Buy Shellfish

    Lobster, whole clams, crabs, oysters and mussels must be alive. Lobsters and crabs should be really lively, if they seem lethargic; don’t buy. The muscles of live mollusks are difficult to pry their shells open, so that’s a good test if fresh. If scallops or oysters are already shucked and clean smell them if possible first this helps know if fresh.

     

  • ** When buying fish always check their eyes especially the pupils make sure they are clear, next look carefully at the skin. If it’s faded or gray the fish is old. Press your finger to the flesh it should be moist and firm it should spring Back lot leaving a small dent, and if the fish is fresh it should not smell offensive.
