1 cup light brown sugar
1 cup butter (2 sticks)
4 eggs
1 tsp Vanilla
1 3/4 c all purpose flour
1/2 tsp baking powder
1/4 tsp salt preheat oven 350 degrees. grease and flour 9x5x3 loaf panin large bowl beat sugar and butter until fluffy beat in eggs one at a time, add vanilla
in a separate bowl combine flour baking powder and salt.. gradually add to the sugar mixture pour batter into pan. Bake 1 hour or till toothpick comes out clean in center. Remove from pan and turn out on rack to cool completely. garnish with berries and whipped cream
SWEETENED WHIPPED CREAM
1 cup heavy cream
2 tbsp white sugar
1/2 tsp vanillacombine cream sugar and vanilla
in a chilled medium mixing bowl
beat on med high speed until soft peaks form
use immediateley or refrigerate 2 hours
